Cheesy Sausage Stromboli

(adapted from Jeanette Petersen’s recipe in the ward cookbook)

5 cups all-purpose flour

2 T. sugar

2 tsp salt

2(1/2 oz.) pkts. Active dry yeast

1½ cup warm water (120°-130°)

½ cup warm milk (120°-130°)

2 T. butter, melted

1 lb. bulk pork sausage

2 c. mozzarella cheese, shredded

2 eggs

1 cup chopped baby bella mushrooms

¼ tsp dried basil

½ tsp dried parsley

2 tsp. parmesan cheese, grated.

Combine flour sugar, salt and yeast. Add water, milk, and butter. Beat on low until well combined. Turn onto a well floured surface. Knead until smooth and elastic, 6-8 min. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled (about 1 hr.). In a skillet, cook sausage until no longer pink. Drain and cool. Stir in mozzarella, mushrooms, egg, basil and parsley. Set aside. Punch dough down and divide in ½. Roll 1 portion into a 15X10 rectangle on a greased baking sheet. Spoon ½ the sausage mixture lengthwise, down one side of dough to within 1” of edges. Fold dough over filling. Pinch edges to seat. Cut 4 diagonal slits on top of Stromboli. Repeat with remaining dough and filling. Sprinkle with Parmesan cheese. Cover and let rise until double (about 45 minutes). Bake at 375° for 20-25 min. or until golden brown. Slice and serve warm. We like to dip in marinara sauce.

Jambalaya

Just follow the directions on the box to make. Only thing is note that the shrimp is already cooked. You can just add it at the end. Also I am going to bulk up my rice mixture by adding a cup of uncooked and extra water.

Recipe confusion....

So sorry to hear about the Apricot Chicken disaster.... I have never made it in the crockpot....
here is the directions that I use....

Mix first 4 ingredients together. Place chicken in a baking dish. Put mixture over chicken.
Cover and bake at 350 degrees for 35 minutes. Then uncover. Bake uncovered for 20-30 more minutes.

(This will boil the water from the chicken out of the sauce, it then becomes thicker and more concentrated) You spoon the sauce up onto the chicken a few times during this period....Scoop the chunks of apricot and pineapple up on the chicken as you baste. This not only tastes yummy, but really makes your end result look beautiful as well. Also by taking off the foil it browns the chicken as well.

Give it a try again....my family loves this chicken ~ as well as the missionaries :)

I believe this is Melissa's recipe. I got it from Tisha. I didn't get specifics on the cooking instructions, just to put it in the crock pot. From what I remember, I cooked it on low for 4hrs.

Help with Apricot Chicken

I put it in the crockpot on LOW for 7 hours sunday and came home from church to black jerky-like chicken in burned black apricot sauce. I only used half the chicken and sauce luckily. Next time I make it, how long do I bake it and at what temp? Or if I want to do the crockpot, how long on low? I guess I'm pretty lame with guessing on these things.

Joyce's spaghetti sauce

1 med onion chopped
1 small grn pepper ""
4 garlic cloves ""
1 lg can tom puree
2 small cans tom paste (or 1 lg)
1 lg can crushed tom.
2 beef bouillon cubes
Pinch of sugar
1/2 t crushed red pepper
1 t dried oregano
1 t dried basil
1 t dried parsley (or 1/4 fresh)
1 t dried rosemary
salt-pepper to taste
1/2 cup romano cheese (romano best flavor)
sliced mushrooms (opt)

Saute 1st 3 Ing. in oil, add rest of ing. Cook (simmer) 3 hrs. Add 1/2 cup Romano cheese and sliced mushroom (opt) and cook 1/2 hr longer.
